mmm...mmmm... good!

It's 7:00 pm and much later than originally planned for dinner. I have the pasta water boiling and am getting my pot out for the sauce when I frantically start to realize that I have hungry, hungry children and no pasta sauce. Adrien will not eat pasta without sauce. Scott hates a simple clear or butter sauce and Isabella is getting crankier by the minute. No sauce in the cupboard, under the couch (yes we really looked here), in the fridge, under the sink, under the stove, in the laundry room, in the trash. No sauce.

No sauce, no sauce, no sauce. I checked my receipt from earlier in the week. Did I really buy the sauce or am I just going crazy? Yes, I bought the sauce. Scott clearly remembers putting it away, though where still remains a mystery. Hmm...

I ended up improvising quite nicely. Adrien ended up with chicken nuggets from the freezer.

Here is what I did and let me tell you, it was better than sauce!


Jessie's "oh crap" pasta

1/4 cup red onion, chopped

1 vine ripened tomato, diced

4 small cloves garlic, minced (fresh, other wise use 5 of the canned stuff)

2 tblspn Olive oil

1 sprig of fresh rosemary

spaghetti for two

Basil

Italian Cheese



Boil water for pasta, and just as you add the noodles sweep a sprig of rosemary leaves into the water. Cook until done.

Heat oil in a large skillet and sautee garlic and onion together until the onion just starts to turn a golden brown crispy color. Add the tomato and stir, then immediately turn off the heat. Add about one leaf of Basil, torn up and stir again. Let sit on warm burner while you drain your pasta. Divide onto two plates. Divide your "sauce" onto the pasta, top with two pinches of cheese and some sliced basil (approximately 1 leaf per plate). Add a little salt and pepper and you are done.

Yummy!! Scott loved it and I loved it. It was mild enough not to cause indegestion and yet flavorful enough to be satisfying.

Indian Flat Bread Tacos

Scott and I have a tendancy to get stuck in a food rut. We will eat the same thing over and over again, only because it is simple and good. So last weekend I dug out some of my Grandmother's old cookbooks and told Scott that each week we will try at least one new thing, if not two. This week we chose Indian Flat Bread Tacos. They were so yummy! And colorful, they turned red as we cooked them. The other bonus was that Adrien ate them, which is a miracle. That kid is so hard to feed.
I accidentally tripled the amount of turmeric in the recipe, which wasn't a bad thing. We did a quick hamburger, onion, tomatoe and cheese filling. But you can do anything, I bet even some fruit would be good in it. Today I am going to make the dough and bake chips out of it. I'll let you know how that endeavor goes.
Here they are:


INDIAN FLAT BREAD TACOS

1 1/2 Cups flour

1/2 tsp turmeric

1/4 tsp baking soda

1/4 tsp salt

2 tbsp butter


Combine the ingredients and add enough water to form a firm dough. Divide the dough into 6 balls and roll out until they are approximately 1/4" thick. Heat a pan with a bit of oil. Place a spoonful of filling into the center of rolled dough, seal with water. Cook in oil until golden brown (or red) on each side. Keep warm


So simple, yet so tasty!

Night 2, Day 2

As I woke up this morning, I realized that both of my kids slept through the night. Yup, thats right, THE WHOLE NIGHT! As amazing as it seems right now though, I just don't feel all that rested. I think I didn't sleep very well because I was constantly expecting them to wake up. Jeez... Oh well. Anyway, Adrien sits at his little table right now and eats his banana pancakes. He loves banana pancakes and sweet potato pancakes. I really don't understand why pancakes are one of the few things that he will eat right now. The other thing is strawberries. My boy has a love affair with strawberries. If he knows that we bought strawberries and most times he does, he eats them with every meal and snack. One time, we were at the grocery store and we grabbed the 4 lb box of strawberries and continued to do some more grocery shopping. We pulled up to check out counter, Adrien happily flirting with every person in sight. Then as he is sitting in the cart after the bags have been packed, I realize that the 4 lb box of strawberries is now next to my little boy and he is pointing and asking for one, saying "dis? dis?" with a look of absolute pride on his face. What's a momma to do? Part of me wanted to say no. The other part, the part of me that realized that he did not throw a fit at all in the store, that he got the strawberries out by himself and was now politely (as possible) asking me to give him one said yes. So, there he sat in the cart with a 4 lb box of strawberries and red lips and juice dripping from his chin. It was very cute.

Tonight, my mother-in-law is coming over for a quick babysitting and dinner. I am going to go to the gym for at least a half hour. It is absolutely annoying to go from goign to the gym every other day to only going three times a week and most of those three times has to be on the weekend. I am already feeling bloated and yucky. Ew. I plan to cook chicken. It is going to be just a bit spicy and we are going to have some left over brussels sprouts, corn and brown rice. I really don't like brown rice, but I hear it has extremely healthy qualities, so I am trying. We have also switched to whole wheat flour and I am making sugar cookies with it today... wish me luck. I'm not excited about that one.
